EGR: Pepper Fiesta!

Are you ready for another "everyday glee (gluten-free) recipe" (what we call an EGR around here)?  How about a pepper fiesta!?

Recently, the grocery stores around here have started selling these tiny little sweet peppers.  The moment I saw them, I knew that I needed to eat as many as possible!  They're delicious raw, but we were going to a potluck yesterday, and I wanted to make them a little bit fancier.  Just like big peppers, we decided to stuff them, but made things a bit simpler by just using cheese and chopped up meatballs.  They were delicious!  Would you like to see how they turned out?

The thing that strikes me most is the absolute glorious colors!  Have you ever seen a brighter collection of fiery, sunset colors?


Even cut up, they're still so bright, if a bit more muted:

They "chilled" (hehe!) in the oven at 375 for about 15 minutes, until the cheese was browned and the peppers were softened:


We did a few with meatballs covered in Parmesan, and took both batches in our new pie plate to the potluck:
