White Chocolate Coconut Almond Delight

This weekend I had a bit of a sweet tooth emergency, and raided the pantry to see what we had on hand.  We had tiny cupcake liners, sweetened dried coconut, almonds, and white chocolate chips.  Let's see what we can do with those! First, we'll put some white chocolate chips into a cupcake pan and top with a single almond.  Already a good combination ; ) Then, let's top them off with a pinch of sweetened shredded coconut.  This is what really makes it fabulous- the way the coconut toasts in the oven and becomes ever so slightly crunchy is divine! Then pop 'em into an oven at about 350 for 6 or so minutes until the chocolate has melted a bit and the coconut has crisped a bit.  If you need to, you can smush each one down with the back of a spoon to help them hold together.   When they are crisped and melted to your satisfaction, let them cool on the counter, then pop 'em out of the pan, and let the munching begin! Adventures on Snowshoes

Last weekend, we had the absolute best weekend adventure of all time!  Mr. Mersy organized an outing for us and two of our dear friends into Upstate New York.  We escaped from the city on a gloriously bright and sunny day, with a high of only 18 degrees.  Brrrrrrrrr.....! Just about an hour's drive along the Hudson River Valley is Fahnestock State Park, and that is where we headed.  The park is in the foothills of the Catskills, so the landscape is gently rolling and forested with great views and rocky outcroppings.  What a relief to be out in the natural world again! At the park, we put on our extra layers- I was wearing long johns, jeans, my socks, a pair of Mr. Mersy's wool socks, a hat, earmuffs, a hood, down jacket, down mittens, and fleece-lined snow boots, but when we first got out of the car, I was shivering.  These bright, clear winter days sure can be frigid! Sunny Colored Crochet Potholders

Here are some photos of Mr. Fox's traveling companions.  These sunny treats will be sent along with the Fox Scarf to Mama Mersy.  I hope that she likes the sunny colors! These are one of my very favorite thing to crochet.  I love the cotton yarn, the bright colors, and the surface crochet embellishment. These are meant to match Mama Mersy's new tropical Fiesta dishes.  Lemons, limes, oranges, mangoes, sea blues and sunshine.   Send us some photos of the potholders paired with the beautiful Fiesta colors! Crochet Fox Scarf: Ta-dah!!

Hello Mama Mersy!  Your fox scarf is at last finished and on its way to you in the mail! I will miss working on him, little by little watching him grow.  And Penny will miss snuggling with him during our evening crochet time.   We hope that he keeps you warm and cozy during the Polar Vortex! Heart Yarnbombing in NYC

This week Mr. Mersydotes and I made sure to spread the cheer by dropping heart bombs all over the city.  It was quite a rush! You have to duck and weave and be slight of hand and fleet of foot if you want to leave a cheery little heart on the metro in the middle of a rush hour commute! And there are a lot of iron fences surrounding derelict construction sites in our neighborhood that needed a bit of cheering up. Thanks to One Sheepish Girl for sponsoring the second annual heart yarn bomb!  It's a splendid idea and I know that somewhere out there one of the Mersydotes hearts made someone smile! : )  ~Mersydotes

If this post were an epic rap song ballad, it would be called "My Heart in a Jar: A Love Song to New York".   I don't love New York City- far from it, but the best way I can fight back against all the yuckiness of this town is to cover it in tiny pink crocheted hearts- hahahahahahaha!!!!!!  Take that, NYC!!!!!!!
