The Great Tomatillo Plot

Tomatillos are fascinating vegetables, as they are the only ones I know that have foresight.  Before they start producing their fruit, they first create delicate little papery globes to encase them.  In fact, the plant looks so festive, as if dozens of paper lanterns are waiting to be lit for a party.

Slowly, as the tomatillo grows, it is sheltered by the papery cover, until one day you poke it and realize that it's ready to be picked.

As you peel back the covering, the fruit appears, so green it almost seems to glow!

We had a bumper crop of tomatillos this year- can you see how far-spread the plant's branches are throughout our little garden?  The crazy weather doesn't seem to faze it, and the plant seems to be thriving with floods one week and scorching drought the next.

In fact, after the onion crop, which has ended by now, tomatillos seem to not only be producing the most veggies at the moment, but also to be slowly taking over the entire garden plot.  Making our little garden both literally and figuratively the site of "The Great Tomatillo Plot"!

I thought that was funny ; )

P.S.  I'm making salsa verde with all these tomatillos tomorrow.  Yum!
